NEW O'LEANS RED BEANS AN' RICE

Serves 8.

 

2 1/2 cups dried red kidney beans
9 cups water
1 lg. bay leaf
3 T soy sauce
1 lg. onion, chopped
1 t tumeric
1 1/2 t ground cumin
1 1/2 t ground coriander
2 dried chipotle peppers, ground
3 T oil
7 lg. cloves garlic, minced
10 cups cooked rice

 

Rinse beans. Pour into water. Boil and reduce to simmer. Add soy sauce, bay leaf, spices and chipotles. Add onion, garlic. Simmer 2 1/2 hours, until beans are soft and juices are creamy.

Use whole wheat flour to thicken, if necessary.

Serve on rice.
