Mom made these cookies at Easter, and they were fabulous. I made them for a frisbee team cookout last week, and they were a huge hit (Mary, Patrick and Liam all love them as well).

(This is a HUGE recipe, but can easily be 1/3rd or 2/3rd).

-Cream 3 sticks butter for 1 minute.
-Beat in 1 Ĺ cups sugar and 1 Ĺ cups brown sugar, then 3 eggs, one at a time, with 1 Tbsp vanilla.
-In a separate bowl, sift together 3 cups flour, 1 Tbsp baking powder, 1 Tbsp baking soda, 1 Tbsp cinnamon and 1 tsp salt. Stir into creamed mixture.
-Add 3 cups chocolate chips, 3 cups oatmeal, 2 cups flaked coconut, and 2 cups chopped pecans (or walnuts).
-Drop 1/4 cups of dough about 3" apart on ungreased cookie sheets. (The secret to their chewy goodness is in the size; donít skimp on the 1/4 cup of dough.)
-Bake at 350 degrees for 17-20 minutes. Makes 4 dozen huge cookies.
