CORNBREAD

Inspired by Joe's Colvin Run stoneground cornmeal. Recommended with red beans n' rice.

1 cup cornmeal (preferably good quality stone ground)<
1 cup unbleached white flour (or half whole wheat, half white)
4 tsp baking powder
1 egg
1 cup milk
1/4 cup vegetable oil
3/4 tsp salt

Preheat oven to 400 degrees.

In a large bowl, blend all ingredients. Pour into a small baking pan. Bake for 20 to 25 minutes.
