GINGERBREAD CAKE

Firm, cake-like, not too sweet.


2 1/2 cups flour
2 t baking soda
1/2 t salt
1 T ground ginger
1 T orange zest
1 T vanilla
1/2 cup butter or solid vegetable shortening
1/4 cup firmly packed dark brown sugar


2 eggs
1 cup molasses
1 cup boiling water

Preheat oven to 375 degrees. Grease and flour an 8" square pan (or an 8 or 9" cast iron pan). Stir together flour, baking soda, salt and ginger.

In another bowl, beat sugar and butter together until well blended. Beat in eggs. Add molasses, orange zest and vanilla; blend well. Stir in the boiling water. Immediately add flour mix and stir until batter is smooth.

Spread batter in pan. Bake 35 to 40 minutes (until toothpick in center comes clean). Remove from oven. Set on rack to cool. Serve warm or cold.
