LASAGNA
SAUCE:
1 cup chopped onion
minced garlic (lots)
3 cups chopped tomatoes
2 cups tomato paste
1 t salt
pepper
2 T fresh parley
1 1/2 t basil
1 1/2 t oregano
some olive oil (1/4 cup maybe)
anything else you like in your sauce
Sauté onion in oil. Add everything else. Simmer 30 minutes.
COMBINE:
2 cups ricotta or cottage cheese, or mixture of both
2 beaten eggs
1/2 cup good parmesan
some fresh parley
1 or 2 lbs. spinach, steamed drained chopped (or frozen thawed and
drained)
BOIL:
8 oz lasagna noodles
GRATE:
1 lb. mozzarella
Coat bottom of greased lasagna pan with some sauce.
Layer 1/2 the noodles, 1/2 the mozzarella, 1/2 the ricotta mix and 1/2 the sauce. Repeat.
Sprinkle top with parmesan before baking.
Bake at 350 degrees for 30 to 40 minutes.
Let stand 10 minutes before cutting.
