LAZY LASAGNA
Mom must have been so happy when she made this simple recipe and all of her children enjoyed it. That is pure joy for moms cooking for children. (--Mary)
1 lb. shapely pasta, cooked al dente
1 1/2 cups good spaghetti sauce
1 egg (optional)
2 cups ricotta or cottage cheese
3/4 lb. mozzarella, cubed
10 oz. frozen spinach, thawed & drained (or use 20 oz. Fresh, lightly steamed)
Mix everything together in a casserole. Bake at 350 degrees for 30 minutes. If
you don't use the egg you can skip baking, just make sure it is hot so the
cheese is stretchy.
