MOCHA PIE

Very sweet and rich. I like to use a little less than 1/4 cup of milk just so I get it to be more pie like and less pudding like. I also like to add more coffee and leave out the water.
2 chocolate pie shells
1 12-ounce package chocolate chips
1 pint whipping cream
1/4 cup milk
2 eggs
1/4 cup sugar
1/8 t salt
2 T water
5 T liquid, strong coffee
Take 1 1/4 cup whipping cream and 1/4 cup milk and place in a sauce pan and heat to almost boiling. Remove from heat as it starts to bubble.
While the cream is heating, place all of the remaining ingredients in a blender (do not include the remaining whipping cream, this is for a topping) (also do not put the pie shells in the blender, for this would be stupid). Pour the hot cream into the blender. Mix on high for at least 1 minute. Make sure it is well blended.
Pour mixture into pie shells. Refrigerate for at least 6 hours.
Whip the remaining whipping cream, adding sugar and vanilla to taste. Top pies with whipped cream. Decorate with chocolate chips, Hershey's Kisses, or whatever you'd like or don't decorate 'cause there is already enough chocolate.
