CARROT SPICE MUFFINS

These are very good to bake and bring to school or work to share with a friend. Feel free to up the spices.

 

1 1/2 cups whole wheat flour

1 t baking soda

1 t baking powder

1/2 t salt

3/4 t cinnamon

1/2 t nutmeg (freshly ground is best)

1/8 t ground ginger

1/8 t allspice

1/3 cup honey or 1/2 cup brown sugar

1 egg

1/2 cup yogurt

1/3 cup melted butter or canola oil

1 t vanilla

1 1/2 cup grated carrots

1/2 cup raisins (optional)

1/2 cup chopped nuts (optional)

 

Mix the dry ingredients in one bowl, the wet ingredients in another (including carrots, raisins, and nuts).

Add wet stuff to dry.

Stir with big gentle round strokes, just until flour is moistened.

Pour into greased muffin tins. Bake at 400 degrees for 15 minutes.
