RHUBARB "rutabaga" CRISP

CRUST:

1 1/2 cups oatmeal

1 1/2 cups brown sugar

1 1/2 cups flour

1/2 t baking soda

1 cup butter

FILLING:

3 cups rhubarb, chopped

1 1/2 cups sugar

3 T cornstarch

1/4 cup water

 

Mix the crust ingredients with a fork.

Pack 3/4 of the mixture into a 9" x 13" pan.

Mix the filling and cook until thick, stirring often.

Pour the cooked mixture onto the crust.

Sprinkle remaining crust mix as a topping.

Bake at 375 degrees for 30 to 35 minutes.
