ROLLED FISH FILLETS (needs a better name)

All ingredients are way flexible and approximate.

 

1 lb. (or so) mild lovely fresh fish fillets (this could be anywhere between 4 and 8 fillets)

SAUCE:

3/4 stick butter

1/2 cup fresh lemon juice (3 lemons)

freshly ground pepper

Melt butter and mix sauce together.

FILLING:

1 or 2 sliced leeks

1/2 lb. chopped fresh spinach

1 cup cooked rice

1 cup grated cheese (asiago or parmesan or cheddar or whatever)

 

Gently sauté the leeks and spinach.

Add rice, cheese, and 1/4 cup of the lemon butter sauce.

Roll the filling into the fillets.

Pour remaining sauce atop.

Bake 400 degrees for 20 to 25 minutes.
