This dish is the quintessential Sustar hors d'ouvre; it has been served to impress guests of all sorts, including those who visited our house for Catholic marriage prep.

2 beaten eggs
2 packages frozen chopped spinach, thawed and drained
1/2 stick butter or margarine
1 lb. Monterey jack cheese, grated
1 cup flour
1 cup milk
1 t salt
1 t baking powder
1 T dried onion
1/2 t dried oregano
1/2 t dried basil

Preheat oven to 350 degrees.

Mix all ingredients, and pour into a 9" x 13" baking pan.

Bake for 45-50 minutes.

Cool to room temperature, and cut into squares.
