UNMEATBALLS


1-1/2 cups whole wheat bread crumbs
1/2 cup grated cheddar or parmesan cheese
1/2 cup chopped nuts (walnuts or pecans)
1/2 cup well chopped onion
lots of (~8 cloves) minced garlic
1/2 t salt
1/2 t coursely ground black pepper
1 t dry oregano
1 t dry basil
1 t red pepper flakes (optional)
3-5 eggs (whatever it takes to get the proper consistency)

olive oil for browning
4 cups spaghetti sauce


Combine everything except oil and spaghetti sauce in a bowl. Mix with hands.
Shape into balls, large or small.
Brown in oil, try to get as many sides as possible.
Blot with towel to absorb excess oil.
Throw them into a casserole dish.
Pour the spaghetti sauce over.
Bake covered at 350 degrees for 30 minutes.
